Project Description

The Ontario Spring Water Sake Company, makers of IZUMI-branded sake and located in downtown Toronto’s Distillery Historic District, is eastern North America’s first sake brewery. Using traditional Japanese methods and recipes with delicious Ontario spring water, Torontonians and visitors alike can now enjoy fresh, unpasteurised, locally-brewed sake for the first time. Ontario Spring Water Sake Company is a member of the Brewing Society of Japan.

C3 Production was exclusively invited to participate in the sake pressing process, which occurs up to 9 times a year at the Ontario Spring Water Sake Company.  After the moromi (mixture of rice, koji, water, and moto) is fermented for about a month, the fresh sake is pressed, dripped, or squeezed out.  It takes a true expert to pinpoint the exact day that the moromi is ready for pressing.  It was an absolutely thrill for our Beauty in Motion crew to capture these trained professionals in action!
